Easy Taco Mac
Creamy taco mac with ground beef, elbow pasta, tomatoes, cream cheese, sour cream, and cheddar.
Ingredients
- 1-1/12 lb ground beef (80/20 local beef recommended)
- 6-8 oz Elbow pasta
- 1 cup reserved pasta water (reserved water)
- 1 can diced tomatoes (petite) (with juices)
- 1 pkt Kinders Taco Seasoning
- 3 oz cream cheese
- 1 cup sour cream
- 1-2 cup shredded sharp cheddar cheese
- salt and pepper
- green onions (chopped; for garnish)
Method

Bring a large pot to a boil, add salt and elbow noodles, and cook to al dente (about 6-8 min).

Reserve 1 cup of the water. Drain noodles and set aside.

Over med-high heat, brown the beef, season with salt & pepper, and drain off any grease.

To the skillet, add taco seasoning, tomatoes with their juices, salt, pepper, and simmer for 3-5 minutes.

Stir in the cream cheese and sour cream until melted.

Add the cooked pasta & slowly add the reserved water as necessary.

Add in 1-2 c (or desired amount) of cheese until melted.

Top with additional sour cream & chopped green onions.

Serve with garlic bread of choice.
