Method

  1. 1

    Preheat oven to 400.

  2. 2

In a large mixing bowl, whisk together flour, baking powder, and 1 tsp salt.

  3. 3

Using a pastry cutter, cut butter into the flour mixture until crumbly (pea-sized butter pieces).

  4. 4

Make a well in the dry ingredients and add the milk, stirring just until the mixture comes together.

  5. 5

Turn out dough onto a floured surface and knead lightly 3-4 times.

  6. 6

Roll dough with a rolling pin about 1/2 inch thick and cut biscuits out with a 2-2 1/2 inch cutter.

  7. 7

Makes about 8-12 biscuits, depending on cutter size and how many times you reroll scraps.

  8. 8

Bake on parchment-lined sheet, 2 inches apart, for about 10-12 minutes, until tops are slightly golden brown.

  9. 9

Cook the sausage patties in a skillet until no longer pink.

  10. 10

Melt butter in another skillet and fry the number of eggs equal to the amount of people you're making biscuits for.

  11. 11

Season with salt and pepper and flip to cook the other sides, making sure yolk is fully cooked and not runny.

  12. 12

Assemble biscuits by cutting in half, placing egg and sausage in order as desired, spreading fig jam to desired amount, and topping with the other half of the biscuit.

  13. 13

    Enjoy.
