Dinner TBD
Flavortown Black Bean Burgers With Salsa and Avocado
- Serving size
- Serves 4-5
Ingredients
- 2 cans black beans (drained & rinsed)
- 1 cup rolled oats
- 1/2 cup all-purpose flour (or gluten-free all-purpose flour)
- ½-1 onion (white or yellow, chopped)
- 3-4 cloves garlic (minced)
- salt and pepper
- about 6 tbsp olive oil (2 for onions & garlic; 4 for burgers)
- 1 jar salsa (of choice)
- 2-3 ripe avocado
- 1-3 packs Uncle Bens Basmati Rice (or microwavable rice of choice)
- 1 bottle Flavortown Chipolte Sauce (or chipotle sauce of choice)
Method
- 1
Sauté onion and garlic in 1-2 tbsp olive oil until soft (2-3 min); remove from heat.
- 2
In a large bowl, mix black beans, rolled oats, all-purpose flour, and about 1/3 cup salsa.
- 3
Season generously with salt & pepper.
- 4
With a potato masher, mash the mixture enough so that most of the beans are mashed, but you can still see some whole beans throughout.
- 5
Add in the cooked onion & garlic and stir to fully incorporate all.
- 6
Shape into palm-sized burgers and place on a plate (should make 8-10).
- 7
Heat another 2-4 tbsp olive oil in a med-high skillet; cook burgers about 3 min on each side until browned and hot throughout.
- 8
Meanwhile, heat rice in microwave; spread onto a serving plate or large serving dish and slice the avocado. (One pack of rice serves 1-2)
- 9
Place desired amount of burgers on top of rice and top with salsa & sliced avocado.
- 10
Drizzle with Flavortown sauce and serve!
Notes
The burgers heat up really well in the microwave for leftovers the next day.
